Making a quality cognac starts with a reflection on the environment and on time.
The vine is a root anchored deep in the earth. It draws its resources there and will produce grapes over several decades.
The quality of the grapes is essential to produce cognac. Above all the love dedicated through one's work, the desire to impart a healthy vineyard, to inspire good work habits and to always question oneself every day is primordial.
The vines are treated with respect for the soil, without chemical pesticides or herbicides. The management of the vine is thought out according to the plots and the type of soil. We do our best to obtain quality, healthy and aromatic grapes.
Our vineyard has been managed entirely using organic farming techniques for 20 years.

WORK IN THE VINEYARD

LE RAISIN

Our vineyard is made up of three grape varieties essential for making cognac.
UGNI BLANC,
The major grape variety of the appellation ; it produces an acidic wine which favours the aromatic concentration of Cognac spirits. « Eaux de vie ».
The COLOMBARD and the FOLLE BLANCHE,
These grape varieties represent only 1% of the vineyards in the appellation, and are renowned for their very aromatic and very intense « eaux-de-vie ».
This diversity of grape varieties plays an important role in the complexity and aromatic richness of our Cognac.

LES VENDANGES

Even though today our harvest is fully mechanized, it still requires human intervention and decisions in every stage of the harvest.
This is an exciting time on the property. Our harvesting machine is equipped with an automated sorting table to remove all the unwanted plant debris: leaves, stalks, wood.
The grape harvest is loaded by gravity into the presses from the top in order to respect the taste qualities of the grapes.
The freshly squeezed grape juice ferments in thermoregulated stainless steel tanks for 24 hours, to guarantee optimal control of the natural fermentation process.
